I appreciate your concerns about Ray’s on the River’s recent health inspection score and assure you that all of the mistakes have been corrected. Please know that all of us take food safety very seriously and understand this was our error. Guest safety was never at risk, and Ray’s on the River remains a safe place to eat. These are your 5 most recent inspection ratings: Inspection date: January 23, 2013: Score: 97, Grade: A Inspection date: January 18, 2013: Score: 56, Grade: U Inspection date: May 11, 2012: Score: 91, Grade: A Inspection date: May 4, 2012: Score: 59, Grade: U Inspection date: April 11, 2012: Score: 98, Grade: A What these indicate is that Rays is managed irresponsibly, and that its attention to sanitation is opportunistic. You clean up your act only when caught in a condition of disgust. Once rectified and the unwanted attention passes, you fall back into irresponsible sanitation management. Rather than minimizing Ray's shameful performance you should attend to rooting out the failed management and the workers whose cleanliness and other work habits place your customers at risk.

We certainly agree that a failing score is unacceptable and understand your concerns. We accept responsibility for our mistakes and have gone to great lengths to correct them. This includes the implementation of new checklists and standards, as well as team member training. Your restaurant failed in May, 2012. OK, so you fixed things immediately afterward. But then only eight months later, another failure. How have you gone to "great lengths" to correct the deficiencies? Eww. Yuk. Feh.
